Roasted Sweet Potato Fries

Cold weather food needed! I think these would be a great accompaniment to a bowl of soup. Anyone have a soup suggestion?



1 tablespoon olive oil, divided
2 large sweet potatoes (about 1-1/4 lb.)
1/4 teaspoon salt
1/4 teaspoon chili powder
1 teaspoon brown sugar

Brush an aluminum foil-lined pan with 2 tsp. olive oil. Heat pan in a 425° oven 5 minutes.

Peel sweet potatoes, and cut into 3- x 1/2-inch strips. Combine strips, salt, chili powder, brown sugar, and remaining 1 tsp. oil in a large zip-top plastic freezer bag, tossing to coat.

Place strips in a single layer in prepared pan.

Bake at 425° for 30 minutes or until crisp, stirring every 10 minutes.

I made your Tortilla Soup this weekend and added some corn to it. It's very good. Haven't made these fries yet but they sound so good.

Ended up making these. they were terrific.

We had something similar with regular potatoes ranch dip powder mix and olive oil during thanksgiving.
